When I became a single dad back in 1990, I knew I had to learn how to cook. Finding time seemed like an overwhelming task, but a friend suggested I try crockpot cooking. I have been hooked ever since! Over the past 20 years I have compiled hundreds of recipes that my friends and family have enjoyed. My brother, on a recent visit from Ohio, liked my cooking so much that he gave me the nickname “Chef Laree.”
We all live very busy lives so I thought sharing some of my recipes might be a fun way to connect with some of my neighbors. Feel free to send questions or comments about any of the posted recipes. Cock & Bull Stew
Ingredients:
- 1/4 cup steak sauce
- 2 chicken bouillon cubes
- 2 beef bouillon cubes
- 1 teaspoon garlic salt
- ½ teaspoon pepper
- ½ cup hot water
- 2 to 3 pounds chicken thighs skin on bone in
- 1 pound stew meat in 1 to 1 ½ inch cubes
- 1 medium onion chopped
- 2 medium potatoes peeled and cubed
- 2 medium carrots pared and thinly sliced
- 1 16 ounce can stewed tomatoes
- ¼ cup flour

Place all ingredients except flour in crock pot and cook on low 5 to 10 hours or on high for 4 hours. Right before serving remove chicken and bone and return to crock pot and stir well. Take ¼ cup of juices from pot and stir in flour forming a paste. Stir paste into pot and turn to high setting until mixture thickens. Best stew EVER!!!!

Chicken Pasta
Ingredients:
- 4 boneless skinless chicken breasts cut in bite size pieces and garlic salted to taste
- 8 ounces sliced mushrooms
- 2 jars artichoke hearts chopped
- 16-24 ounces of Alfredo sauce
- 2 packages fresh fettuccine
Place all ingredients except pasta in crockpot and cook on low 6 to 7 hours. Prepare pasta as per package instructions and add to crockpot.

Creamy Mashed Potatoes
Ingredients:
- 5 pounds potatoes
- 1 tablespoon minced garlic
- 3 chicken bouillon cubes
- 8 ounce cream cheese softened
- 8 ounces sour cream
Bring large pan of salted water to boil containing potatoes, chicken cubes and garlic. When potatoes are soft strain and add in sour cream and cream cheese and mash. Place mixture in crockpot and top with chives. Cook on low 2 to 3 hours.
